Stay cool in the summer heat with these refreshingly boozy frozen treats!
Watermelon Mint Julep Popsicles
1 half seedless watermelon 1/3 cup of bourbon 1/2 cup of lime juice 1/3 cup of agave nectar/honey 1/2 cup of fresh blueberries Mint leaves Dixie cups + popsicle sticks
In a food processor/blender puree chunks of watermelon. Add in bourbon, lime juice, agave or honey, and mint leaves. Blend until liquified. Pour mixture into dixie cups until half full. Add fresh blueberries into each cup as desired. Top up dixie cups with watermelon puree. Freeze for approximately 2 hours. Then insert sticks.
Freeze until solid and enjoy!
White Wine Sangria Popsicles
In a jug combine wine, syrup, Triple Sec and lemon juice. Slice lime/lemon into thin slices. Either half the slices to put into the sangria or use whole slices as the base of your popsicle (where you will insert the popsicle stick) to avoid excessive dripping and for a pop of colour. Add in lime/lemon slices and other chopped fruit to wine mixture. Pour liquid into dixie cups. Freeze for approximately 2 hours. Then insert sticks.
Freeze until solid and enjoy as popsicles or use as ice-cubes!
Cucumber Ginger Gin Popsicles
Half cucumber length-wise and scoop out any seeds. Either peel the cucumber or leave skin on for more colour and texture. In a food processor/blender puree cucumber. Add gin, lime juice, and simple syrup to taste. Add ginger beer in last. Pour liquid into dixie cups. Freeze for approximately 2 hours. Then insert sticks and freeze until solid.
